A Montreal restaurateur fell in love with the region of Chablis and began his own business in 2008. He makes very expressive and mineral driven styles of Chardonnay from grapes grown by people he trusts. Everything is hand harvested and vinified in separate parcels. Terroir de Chablis is from two parcels, both north-facing, very near to 1er Cru Montmains. It’s fresh and rich on the palate with an herbal finish. Fermented and aged in tank.
