Philippe Gilbert began his professional life as a dramaturg with plays showing in major cities around the globe. After having travelled the world for the arts, Philippe found himself coming home and continuing his family legacy of winemaking. This philosophical side was always a part of Philippe and we see it translate in every bottle. Philippe's wines are a great representation of Menetou-Salon, which shares the same famed Kimmeridgean clay soils found in Chablis and Champagne. The Pinot Noir is 70-80% de-stemmed followed by spontaneous fermentation in 90 hl Founders for 2-3 weeks.
