Raymont Dupont-Fahn is a fifth-generation winegrower who takes great pride in producing high-quality wine. He abstains from the use of pesticides in the vineyards and avoids chaptalization, a process of adding sugar to the grape must to increase alcohol content. Raymond prefers to harvest his grapes early to maintain higher acidity and lower alcohol levels in his wine. He ages his wine for a period of time in new oak barrels, with 20% of the barrels being new, and all of the barrels being under three years old.

Chaumes des Perrières is a wine that is relatively unknown in Burgundy. The history of this wine is interesting, as the piece of land above the premier cru of Perrières in Meursault used to be part of the Meursault villages designation until the late 1970s. Raymond Dupont-Fahn's grandfather, Michel, purchased a plot of land in 1975 and had to petition the INAO to add 20 centimeters of topsoil to his unplanted land. The topsoil was so thin that Michel feared new plantings would wither and die. The INAO approved the request, but this decision upset the other growers in Meursault. They petitioned to have the parcel declassified to Bourgogne from Meursault AC, which they were successful in doing. As a result, these vines, which sit fifty meters above the Perrières vines of Domaine Coche-Dury, are only ranked as Bourgogne.
