Hervé Souhaut is located in Saint Jospeh in the Northern Rhône. He began his estate back in 1993 and is committed to working with old vines and whole bunch and semi-carbonic maceration. This is 100% Gamay but gives the impression of a Northern Rhône Syrah. The fruit is a bouquet of plum, pig and bramble with notes of black pepper giving the illusion of Syrah, but the tannin is light and refined.
Pairing: Herb encrusted roast chicken, veal chops, pork loin, braised ox tail, aged sausages
