Hand harvested, the Pinot Noir for this traditional method sparkling wine is the result of a careful cluster selection from Sea Smoke’s estate vineyard. The wine is finished with no dosage, to preserve its finesse. The nose expresses hibiscus, melted butter and baked pear. The wine enters the palate with energetic freshness and is enlivened with minerality on the finish.
Pairing: oysters and and light fish like cod or sea bass.
