Stéphane Regnault—the aerospace engineer turned sommelier who returned to his hometown Le Mesnil and became the first generation to vinify at his family’s Domaine. Since his return home in 2007, the property was converted to organic farming, having been certified organic in 2020. Regnault now uses a number of biodynamic preparations as well: he mentions he’s interested in practices that allow for ‘respect of the soil and living things—an ecosystem is a whole of which the vine is only a part!’.

Taken from the single vineyard Chemin de Flavigny (Grand Cru). Aged on lees three years and nine months. Dosage 1 g/L. Disgorged April 2022.

Vinous, creamy mousse and light brioche notes. This is the kind of Champagne we want to drink every night with dinner!

Grape: Chardonnay, base vintage 2017, with reserve wine 2016, 2015, 2014 blended. (80% 2017 wine, with 20% reserve wine taken from the perpetual Flavigny parcel reserve, started in 2014).

Soil: Clay with Chalk subsoil

Viticulture: organic with some biodynamic principals
