Stephen Vetter Sylvaner 'CK', Franken, Germany 2019
Stefan Vetter is the unsung hero to the godforsaken grape Sylvaner. From a scant few hectares of old vines, working only terraced vineyards completely by hand, Stefan is reimagining what Sylvaner can be – what the wines of Franconia can be.The “CK” refers to “Casteller Kirchberg,” one of the original vineyards that Vetter farmed and the only one outside of the village of Gambach, located in Franken, north of Germany. The Sylvaner here is famous for its textural element, its rustic, saline, crunchy acidity. Think Cru Muscadet but from northern Germany.
Pairing: Chicken liver mousse, foie gras terrine
Soil: Keuper - sandy-gravelly with intermediate layers of loam and an underlayer of ironstone. Also found in Alsace.
