Stolpman Vineyards 'Combe' Trousseau, Ballard Canyon, California 2020
Over 20 years ago, Tom Stolpman discovered a rare limestone outcropping and unobstructed from the Pacific Ocean wind, perfect for growing Trousseau and Syrah. In the vineyard, everything is done manually, prioritizing the health of the vines. In the cellar, they utilize whole-grape, un-crushed carbonic fermentation so as not to extract coarse, under-ripe tannin, leaving the wine bright and chill-able.
Soil: Limestone, Clay
Pairing: perfect companion to summer days, sausages on the grill, steak tartare or Paella
