Sylvain Pataille’s wines, while highly regarded amongst collectors. The Aligoté is my favorite way to enter his catalogue. It’s a lesser known native grape to Burgundy that after being ravaged by Phylloxera at the turn of the century, and falling victim to the stringent AOC classifications, left Aligoté behind, this grape is seeing a resurgence amongst some of the regions best wine makers and for good reason. Aligoté is the perfect vessel for terroir. It’s taught and nervy, with loads of complex minerality and textured mouthfeel make this extremely approachable and never boring.
