Vignoble du Reveur 'Pierre Sauvage Nature,' Alsace, France 2019
Vignoble du Reveur is a domaine founded by the immensely talented Mathieu Deiss (of Domaine Marcel Deiss) and his partner Emmanuelle Milan. As with all things Deiss, it starts in the vineyards and their natural environment. After taking on the vines in 2011, they converted the domaine to biodynamics and received Demeter certification in 2013. We love this wine for its incredible aromatic profile, reminiscent of walking into someone's garden. Notes of honeysuckle, white flowers, lemon balm, chamomile tea with honey in it flood the senses. The palate is subtle yet offers splendid acidity and a light glyceral quality that can nearly be described as crystalline. A highly enjoyable glass of wine.
Pairing: poultry, sausages, roasted vegetables
Grapes: 50% Pinot Blanc, 25% Pinot Gris, 25% Pinot Noir (not co-planted)
Soil: Quatenary alluvial soils
Viticulture: Certified biodynamic, no added sulfur, natural
