The Famoso grape was nearly lost to time, but has recently enjoyed a comeback after being replanted throughout its home turf by a number of viticulturists. Villa Venti in Emilia-Romagna produces this white wine in stainless steel with about 10% of the skins left in during fermentation for some 2 to 3 weeks. It is crisp but has a mouthwatering puckery quality that allows it to hold up to heavier foods.
