Luis Moya is a self-proclaimed 'nomadic winemaker' who has taken to reclaiming abandoned vineyards around Navarra. He is a believer in the restorative power of nature, and tends the vineyards with biodynamic methods to bring life back to the soil, vines, and ecosystem. The traditional wines of the Navarra region fell into obscurity as growers in the mid-1900's focused on quantity over quality, but many old plantings with local genetics remained.
Ostoki means 'place of leaves' and is so named because of the old deciduous oaks that help shade the vineyard. The vineyard is planted with local Garnacha cuttings grafted to Vitis Riparia rootstock that Luis feels are better suited to the riverside terroir. The grapes are all harvested and fermented together in stainless steel with their native yeast, and the wine is aged in 300-liter oak barrels and 54-liter demijohn for 10 months. The fertile soil and shady site near the river promote delicate acidity and nuanced flavors from slow ripening of the grapes. Only 600 bottles were produced. This wine is refreshing but serious, with subtle spice and forest floor notes and fresh red berries.
