A very *very* smooth blanco from Mi Casa's family-owned agave farm in Michoacan, sitting at 6,500 feet in elevation. This area is where many Monarch butterflies migrate for winter, which is the inspiration for the Monarch wings on the sides of the label. They harvest only at full maturity, and practice regenerative farming which includes rotating fields and resting the soils for 8 years after each harvest. Mi Casa has been growing agave since 2000, and began distilling their own tequila in 2011. All aspects of production remain family-owned, and all agaves are from this single estate.
The tequila is distilled at Tequilera de Arandas (NoM 1499) in Jalisco, and is rested for at least 6 months in steel tank to evaporate ethanol notes and concentrate the agave flavors. Overall it's a great example of highland tequila, with a sense of purity and minerality, and is very smooth and rich for a blanco due to the resting period and delicate production methods.
