Guillaume Goisot carries on the biodynamic viticulture practices of his father, Jean-Hugues Goisot, a pioneer in Burgundy. Saint-Bris, previously a part of Chablis, has similar Kimmeridgian limestone and northern climate. Goisot's Aligoté undergoes fermentation and aging in stainless steel with native yeast. Fans of Chablis should give this wine a try.
