During his career as a Belgian man in the wine trade, Michel Couvreur developed a deep admiration for Scotch. He lived in Scotland for years, where he learned the production methods and made relationships with many Scotch producers. In 1978 he built himself a cellar in Bouze-lès-Beaune, basically the middle of Burgundy, and began bringing down fine Scotches from his favorite distillers and aging them in his own caves.  He focused on sourcing the freshest ex-Sherry casks, as is traditional for Scotch, by taking advantage of the fact that he was closer to Spain than producers in Scotland are.

Michel passed away in 2013, but his legacy and attention to detail was carried on by loyal cellar-hand and confidant, Jean-Arnaud Frantzen, along with his son-in-law, Cyril Deschamps. They uphold Michel's standards, especially when it comes to bringing in Sherry casks immediately after they're emptied, to be filled with Scotch as soon as possible. The spirit is still sourced from Michel's top distillers in Scotland, but Jean-Arnaud recently built a distillery on the estate to begin producing single-malt whiskey in France to supplement production. 

The Michel Couvreur 'Overaged' is a blend of up to 50 different single malts ranging in age from 12-27 years. It is blended in vat and then further aged in ex-sherry butts in the estate's Burgundy caves, and finally bottled unfiltered at 86 proof. This is a powerful and deeply warming whiskey with a rich almost oily mouthfeel delivering notes of vanilla, leather, toasted caramel, and dried figs that finish with excellent length.
