Fabien Cazé, a tenth-generation vigneron, has created a small and ambitious project under the label Champgne Cazé-Thibaut by isolating 2.66 hectares of his family's vineyards. The winery has been certified organic since the 2018 vintage, and no herbicides or pesticides are used to support life in and around the vineyards.
'Naturellement' is his flagship Champagne, always made from a single vintage of 100% Pinot Meunier from six parcels farmed organically on the western edge of the Vallee de la Marne. The fruit from each parcel is treated separately in a combination of 228, 350, and 330L barrels for a long, cold, and slow native yeast fermentation. After 24 months lees aging in bottle, they were disgorged on December 10th of 2025, with no dosage. This is a vinous, pure, and precise Champagne, for true lovers of bone-dry bubbles.
