Pierre Baillette - Perine (Pierre's daughter) has taken over her family's Domaine around 2009. The Domaine and vineyards have been in her family for generations. Her production is much smaller compared to other vignerons in the regions, at only 600-1000 bottles per cuvée, other than the Le Village, which is about 3000 bottles. Stylistically, her wines are vinous, slightly oxidative, very mineral and (at the top end) based on single vineyard expressions. Expressive & elegant but persistent mousse, lemon, fresh baked bread & wet stones.
Coeur de Craie is sourced from a full hectare of vines called 'Le Malachets' planted in 1956. It is one of her most limited cuvees at around 700 bottles. From the 2016 harvest, this bottle was disgorged in March of 2021.

Soil: Chalk of Montange de Riems
Viticulture: Since 2010 no pesticides are used on the vines. Two horses are often walking in the vineyard. Manual harvest.
