Collectors highly respect Sylvain Pataille’s wines, and my personal favorite is his Aligoté. This lesser-known native grape of Burgundy suffered greatly from Phylloxera at the turn of the century and was left behind due to strict AOC classifications. However, some of the region's top winemakers are bringing it back, and for good reason. Aligoté perfectly embodies the unique characteristics of its terroir. Its taut, nervy quality, complex minerality, and textured mouthfeel make it approachable and never dull.
