The Bachelier family have been producing Chablis for two hundred years. Florence, together with her husband François, are the 8th generation to farm their eighteen hectares in Villy. Most of their vines are now over 60-years-old and included in their modest holdings is a tiny slice of the Chablis Premier Cru "Les Fourneaux," the only Premier Cru site in Chablis to face due South, like the Grands Crus.
This old-vine Chablis is aged in well-used large barrels, while their traditional AOC bottling stays exclusively in tank; neither wine sees any new oak. Expect crisp yet savory minerality with an elegant density that makes this wine stunning with richer foods. A truly classic Chablis that will appeal to both modern and traditional palates.
