Favonius is the name of the west wind in Roman mythology. In the Portuguese wine region of Lisboa, the western wind coming off the Atlantic Ocean has a major influence on the microclimate in the vineyards. The white grapes are pressed in whole bunches and fermented in stainless steel, with the later addition of additional juice pressed off the skins. The wine ages on the gross lees in steel with no battonage, before bottling with no fining nor filtration, leading to a very expressive but rustic white wine with saline, peach, and herbaceous notes.
