In 1979, Erich Weber acquired a section of the west-facing Euchariusberg vineyard and began his journey. Today he's joined by his son Johannes and together they're making magical wines from the hills of the Saar. They farm with the outmost respect to the earth, never using herbicides and keeping the yields low. In the world of Pinot Noir, this bottling will stand apart, nothing to be compared to a new world example or even Burgundy for that matter, the grapes here have so much natural high acidity that malolactic fermentation doesn't kick in- something that naturally happens in red wine production. That combined with the lower pH of the soil lends itself to a nervy and energetic style of Pinot. Very little of these gems hit the US so don't wait too long.
Pairing: Dim-Sum, mushrooms focus dishes
Grape: Spätburgunder (pinot noir)
Soil: primarily gray slate, with some quartz and quartzite- bearing sandstone
Viticulture: practicing organic
