Jean-Philippe Fichet works to test the limits of transparency, exploring the very soul of his terroir. A tireless and devoted farmer, Fichet is often in the vines from dawn to dusk. He aims to know his vines, and to work with them to find a healthy equilibrium. Grapes are hand harvested and fermentations take place in barrel. The wines enjoy an unhurried 18-month of aging. All of that pure expression you want from a great bottle of Burgundy.
Grape: Chardonnay (from the lieux-dits Nampoillon and Largillas) two old vine plots
Soil: Clay, Limestone
Farming: Practicing organic
Vinification: Fermentations take place in barrel and wine goes through malo in barrel.
Aging: The wines enjoy an unhurried 18-month élevage. A six-year barrel rotation is employed, with only a few wines (in top vintages) seeing more than 20% new wood.
