Because one of the core values of Emme Wines is to produce wines that reflect the season, with as little intervention on the winemaking end as possible, the decision was made to ferment the Carignan as both a light carbonic red and a direct to press rosé. This choice was made to reflect the high acid and delicate flavors of the freshly picked grapes.\u003c\/p\u003e\n\u003cp class=\"\"\u003eTo that end, when the Carignan arrived at the winery it was split into two parts. Half of the fruit was immediately pressed, and the juice was racked off of gross lees and then left to ferment in stainless steel.
