Fabien Cazé, a tenth-generation vigneron, has created a small and ambitious project under the label Champgne Cazé-Thibaut by isolating 2.66 hectares of his family's vineyards. The winery has been certified organic since the 2018 vintage, and no herbicides or pesticides are used to support life in and around the vineyards. This Champagne is made from a single vintage (2021) of 100% Meunier grown on the western edge of the Vallee de la Marne. It is naturally farmed and produced, and disgorged in February of 2024 after 24 months aging sur lattes, with no dosage, to give a vinous, pure, and precise taste.
