Ravines Winery started in 2000, and now owns three vineyards around Seneca and Keuka lakes in the Finger Lakes AVA of upstate New York. All of their vineyards are hand-managed, herbicide-free, and certified sustainable by Cornell University. They produce this vintage sparkling in the Champagne Method for excellent carbonation and a bone-dry finish with the crisp acidity that Riesling is prized for.
