This 2021 from Domaine Chevrot has excellent depth and ripe fruit, setting it apart from many wines in this cooler vintage. It still retains a striking acid backbone, infused with minerality and strengthened by the influence of the granitic soils in these south-facing plots near the banks of the la Cozanne river. Partial inclusion of stems in the fermentation adds complexity to the already earthy tendencies of this vintage, resulting in woodsy and spicy notes which further support the balance of acid and fruit. Due to its lively less reductive nature and the play of minerality and fruit, this is one of the most accessible red Burgundies we've tasted from the 2021 vintage.
This cuvée uses only the best fruit from Chevrot's small holding in the Les Hauts Jarrons 1er Cru vineyard. Fermentation is initiated by native yeasts without cold maceration or early sulfur additions. The wine is immediately racked into barrels, then racked again during the summer to age in barrels which are at least 5 years old. In the following winter, the wine is racked into tank for blending and sees only the bare minimum of sulfur addition before being bottled unfiltered and unfined.
