Sylvain Pataille is known for his mastery of Aligoté. However, his red wines (especially Clos Du Roy) are remarkable, along with his ever elusive Fleur de Pinot rosé. Pataille is an ardent proponent of the Marsannay and Chenôve terroirs working with Aligoté, Chardonnay and Pinot Noir. Pataille’s unwavering dedication to the principles of organic farming and minimal intervention winemaking is truly inspirational despite the setbacks in 2016. Yet, he remains devoted and continues to work his vines manually. He ages his wines for extended periods, often exceeding two years, with minimal sulfur. The wines exhibit sincere, endearing personalities bursting with vitality, and merit attention, particularly for his marvelous Aligotés.
The Fleur de Pinot cuvée is a distinctive rosé. A vinous wine with the depth of great white Burgundy but the textural element of 1er Cru red Burgundy. Fleur de Pinot is a selection of old Pinot vines in “La Charme aux Prêtres” on limestone soils. The wine ages for a year in barrels and half-barrels, followed by another year in the cellar. The aroma is magnificent, with notes of fresh red fruits, flowers, spices, and superb minerality. The fine, fresh, and complex palate is carried by stunning minerality, imparting superb final persistence.
