Made with choice grapes from two vineyard sites in the Salnés Region of Rias Baixas, originally planted by Friar monks long ago.  The quality fruit is cold macerated on the skins for a short time to capture aromatics and allow native yeasts to multiply so that fermentation can initiate spontaneously.  The skins are lightly separated, then vinification begins on the gross lees and finishes on fine lees.  The wine is handled gently and entirely gravity-fed without the use of any pumps. 

Meticulous cellar-work preserves the citrus and floral aromatics of Albariño and retain its mouthwatering saline character.  The cool Salnés microclimate promotes snappy acidity while lees aging provides enhanced body and complexity.  This is traditional low-intervention Albariño, with everything you want it to be and more.
