Wild Common is produced at Cascahuin Distillery (NoM 1123), one of the most traditional and respected operations in Jalisco, producing a number of the highest rated Tequilas in existence. The name Cascahuin translates to "mountain of light," a reference to the mountain outside the town where it's located, El Arenal, which seems to attract lightning in every storm. Built in 1904 by the Rosales Family, not a lot has changed since then. Though they replaced their traditional tahona press with a roller mill in the 1980s, they recently reintroduced a tahona to the process to create truly traditional Tequila.
Wild Common Reposado is crafted by maestro tequilero Salvador Rosales Trejo‚ aka “Chava”. Lowland agaves are roasted 72 hours in small 12-16 ton traditional brick ovens. Pressed on the Cascahuin tahona wheel and fermented with bagasse in traditional ceramic vessels, followed by two slow-to-proof distillations in tiny copper pot stills.
Gorgeous aromas of white pepper, cinnamon, and an herbal desert breeze waft from the glass. A short time in ex-Bourbon casks adds some honeyed depth and extra smoothness without sacrificing any of the intense agave complexity. There is a cool line of clean agave minerality that balances this exceptionally refreshing Reposado. Texturally rich and highly complex, this has quickly become one of the hottest lowland Tequilas among aficionados.
