Mania Castelli owns Torre alle Tolfe, a polyculture farm in the hills of Chianti. The estate's winemaker, Giacomo Mastretta, vinifies his Chianti using 100% Sangiovese, leaving out the blending grapes typical of Chianti. They are aged for one year in cement, and this Sangiovese over-delivers with a perfectly encapsulated fruit and just the right amount of supporting grip—a serious bottle of wine for the price.
