Rose Hill Farm grows beautiful fruit in the Hudson Valley town of Red Hook the way nature intended, without chemicals. They use their apples, cherries, and stone fruits to create distinct and deliciously natural ciders, wines, co-ferments... whatever their hearts can desire and their minds can dream.
Piquette is a style of low-alcohol wine made from a second pressing of grape skins after the initial wine has been pressed off. It is then fermented in bottle to create natural carbonation. Rose Hill made 'Pomquette' as a take on this classic drink, by fermenting the skins and stems of grapes in the juice pressed from cider apples.
Wild fermented sparkling apple-grape wine. Pressed grape skins and stems, rehydrated and co-fermented in low brix cider, a by-product of our cryo-extract. Aged in oak and bottle conditioned with fresh apple juice. Raw, unfined and unfiltered.
Delightfully fresh notes of newly jarred jams. Stunning baking spice and herbal aromatics. Serve at 35-55 degrees in a wine glass. - Rose Hill Farm
