The Laherte family estate is located in Chavot, within the Côteaux Sud d'Epernay, between the Côtes des Blancs and the Vallée de la Marne.  Aurélien Laherte took over the estate from his parents in 2005, and has since become one of the most progressive and dynamic rising stars in the appellation. He sits at the cool kid table with like-minded producers such as Raphael Bereche, Vincent Laval, Benoit Lahaye, Marie-Courtin, and the Agrapart family, with whom he began the "Terres et Vins" producer collective.

All seven grape varietals for this unique Champagne (which comprise the full list of allowed grapes in Champagne) come from a single co-planted plot added to the slope behind the chateau by Aurelien's father in 2003. 

After co-fermentation in old Burgundy barrels, the wine undergoes 6 months of aging on lees with regular stirring, and then enters a solera system which has been in continuous use since 2005.  40% of the wine for this cuvee is from the solera, while the rest is from the current vintage. 

The result is an incredibly complex and rich champagne, especially for an extra brut with under 4 g/l dosage.  Aromatically powerful with great tension and salinity, it opens with classic brioche notes and bruised apple on the nose, anchored to a polished and energetic core. Only 3,620 bottles have been released of this October 2022 disgorgement. 

Pairing: Perfect for a full tasting menu option. This style of Champagne is very versatile with food and will lift anything from raw seafood to poultry and even heavier sauces.
