Since 1998, Domaine Bernard-Bonin has been run impeccably by Nicolas Bernard and Veronique Bonin, the daughter of the well-known Michelot family. The domaine now encompassed 9ha; farming is biodynamic; the wines are produced on a press cycle of two and a half hours, with a rotation every 15 minutes. The resulting musts go to barrel the next day, without adding any sulfur dioxide. Fermentations are allowed to take their course with episodic bâtonnages determined by taste, and the wines spend 16-18 months on the lees. Respecting the phases of the moon, sulfur is only used when the wines are racked in tank. Their wines translate the personality of each terroir, so much so that the same barrels are used every year for each distinct parcel.
Grape: Chardonnay, Bordering two premier crus (Les Charmes-Dessous and Les Genevrières Dessous), the Le Limozin vineyard is situated on an east-southeast facing slope. Aged on the lees for 18 months in 228L oak, 10% new. Unfined and unfiltered
