Nick Africano, a wine expert from NYC with years of experience, has partnered with Ramiro Ibañez from Cota 45 and Willy Perez from Bodegas Luis Perez to create Buelan. This project aims to capture the stories of the wine makers by bottling sherries. However, their latest release is an unfortified wine from the Gomez Nevado estate, located in the Sierra Morena mountains of northern Andalucía. Even though it's not fortified, the aging process is similar to its fortified counterparts and the En Rama bottling. As it ages in the bottle, it will develop a more complex flavor.

Pairing: Marcona almonds, serrano ham, olives, fattier fish

Grapes: Palomino, Arís (Airén) and Pedro Ximénez
