This elegant Italian bubbly is produced by Enoteca Bisson in Liguria, founded by Pierluigi Lugano in 1978. Bisson mainly cultivates indigenous grape varieties on the steep slopes overlooking the Ligurian sea. However, for this Prosecco-adjacent wine, Lugano works with his good friend Eli Spagnol of Torre Zecchei in the Valdobbiadene district of the Veneto, where the world's best Prosecco is produced.
Made with the same grape as Prosecco - Glera - but in a style which is crisp, racy, and never sweet. Bisson's choice to use a bottle cap instead of a cork means they can't legally call it Prosecco, and they are perfectly happy with that. Careful work in their cool cellar preserves the wine's delicacy and aromatic notes of acacia honey, crunchy green apples, and tart nectarines. At once elegant and just plain fun - this simply crisp frizzante wine is everything you want on a sunny day any time of year.
