Buelan Compañía de Sacas 'Nevado', Andalucía, Spain NV
This is a project of Nick Africano, who has worked with wine in nyc for many years, and Ramiro Ibañez of Cota 45 and Willy Perez of Bodegas Luis Perez. Buelan aims to bottle sherries that capture the stories of the people who make the wines. This bottling however is of unfortified wine from the Gomez Nevado estate, in the Sierra Morena mountains of northern Andalucía. Though not being fortified, the aging is similar to that of it's fortified siblings, bottled En Rama and will gain in complexity with bottle age.
Pairing: Marcona almonds, serrano ham, olives, fattier fish
Grapes: Palomino, Arís (Airén) and Pedro Ximénez
Soil: Albariza (chalk)
