Chevrot 'Sakura' Rosé, Burgundy 2025
This beautiful Bourgogne Rosé from Domain Chevrot is a pink that can be enjoyed any time of year. Entirely Pinot Noir, but a blend of three different winemaking techniques. One third of the fruit is saignées from the Bourgogne Rouge, one third is a quick maceration of villages and 1er cru reds, and the last third comes from the direct press juice of Hautes-Côtes de Beaune Pinot Noir. All the different musts are barrel-fermented separately (in barrels 10-13 years old), and all fermentation is done with indigenous yeasts. Blending is done in December, and the wine is bottled in the second week of January with a sterile filtration (preferred to SO2). Nose of wild cherries and raspberries, with a sappy dry palate and long finish that make this elegant rosé a more complex alternative to your typical Provence pink.
