Cognac Park's 'Carte Blanche' strikes the perfect balance of quality and approachability; making it an ideal introduction for anyone beginning to explore this classic spirit category, or a standard on the home bar of any long-time Cognac lover.  This VS bottling is a young blend of 50% Fins bois and 50% Petite Champagne eaux de vie aged in French oak.  The profile is bright and fruity, as is appropriate for a young brandy, with generous notes of fresh apple, white tea, and pear blossom on the nose, while soft caramel, vanilla, and a whisper of apricot round out the finish.  This is an excellent Cognac for cocktails, either in a Sidecar or Corpse Reviver #1, or as a substitute for whiskey in a sour or old fashioned.
