Pierre Guillemot 'Dessus les Gollardes' Savigny-les-Beaune Blanc, France 2021
The Guillemot family has worked Savigny-lès-Beaune vines for eight generations, consistently producing wines with classic Burgundian finesse and balance while leaving us a reminder of Savigny’s rustic character.
This is one of Pierre Guillemot's classic triumphs in his hometown, known for being an exceptionally food-friendly and ageworthy white. The fruit for this Savigny is sourced solely from Dessus Les Gollardes, a plateau tucked into the hills north of the village where grapes ripen slowly thanks to the cool breeze off the Rhoin River. The rare blend of 70% Pinot Blanc and 30% Chardonnay, coupled with the cool microclimate of this site, leads to a unique and long-lived white Burgundy that rewards the patient collector.
Pairing: Crab Claws, Freshwater Fish, Lobster
Grape: 70% Pinot Blanc, 30% Chardonnay
Soil: Marl and Gravelly Limestone
Viticulture: Haute Valeur Environnementale (certified)

The 2021 Savigny-lès-Beaune Dessus Les Gollardes Blanc offers up aromas of white flowers, crisp stone fruits, nutmeg and petrol, followed by a medium to full-bodied, ample and perfumed palate that's animated by lively acids. Readers will remember that this cuvée contains a percentage of Pinot Blanc. While I'd be inclined to approach it young, its longevity is often impressive.
