This is a classic, still, dry mead, made in New York from local wildflower honey fermented fully with no residual sugar. Mead is one of the oldest alcoholic beverages known to man, and while it is still relevant today it is often misunderstood in the US. Mead was traditionally important to regions too cold to grow many fruits, as the annual blooms of wildflowers provided a source of nectar for bees to make honey, which could be cut with local water and fermented into a delicious wine.
Mead is not typically sweet, despite the image you may get upon hearing the term "honey wine". It's not easy to find a classic mead that isn't doctored up with fruit, or carbonated in cans, or sweetened to capture those who think honey wine should taste like honey. Instead it tastes like crisp, dry, tart, white wine; while smelling like a breeze blowing through a meadow of midsummer wildflowers as you pull frames of wax from your bustling beehives.
