Guillermo Erickson Sauza resurrected his family-owned distillery in 2005. Tapping into his family's exceptional experience with Tequila production, he began to carefully replicate traditional methods to create a refined and authentic spirit. Fortaleza soon became the most highly rated and coveted Tequila on the market.
All of Fortaleza’s tequilas are Tahona crushed. The Tahona is a large volcanic stone wheel traditionally used to crush the agave hearts. Where efficiency suffers, flavor prevails as Tahona tequilas tend to have a rounder, richer, smoother sweeter profile. The crushed agave is then washed with the pure mountain water from the Volcán de Tequila to separate the pulp from the woody fibers to create an agave juice called mosto. The woody fibers of the agave, called bagazo, are removed at this time and taken to the fields to use as compost.
