The Cotat family has a long history of tending grapes on the slopes of Chavignol dating back to the end of World War II. In the 1990s, François and his cousin Pascal were handed over the domain from their fathers, and have since climbed their way amongst the best producers in the region. François always harvests by hand late into the season, pushing the grapes to their maximum ripeness, which in turn gives the wine weightier texture and complexity.
Most rosés are simple thirst-quenchers to drink as young as possible. But the brilliant François Cotat’s Sancerre Rosé is a very different story. From Cotat’s ancient Pinot Noir vines in Chavignol, it is not only remarkably complex but also reminiscent of great Chablis in its chalky minerality and vast aging potential.
