Fuenteseca Cosecha '2018' Vintage Blanco Tequila
Fuenteseca is the most famous and highly rated vintage tequila. 'Vintage' meaning all of the agave is from the same harvest and the same site, and the final tequila was rested in tank until bottling, never being blended into tequila from any other years. It all began when Enrique Fonseca ended up with fields of fully mature agave, some many years riper than anyone else is willing to wait. The farm at Vista Hermosa, Micohoacán, has extremely calcium-rich 'caliche' soils at 5,019′ elevation, where the 'pinto' varietal of Blue Weber Agave for the 2018 Cosecha was grown.
Enrique chose the Tequileña, S.A. distillery (NoM 1146), in the heart of the town of Tequila, Jalisco, which distills many well-known Tequilas, including Lapis, Tears of Llorona, ArteNoM 1146, and Cimarron. The Fonseca agaves were given the royal treatment with modern high-quality methods, cooked in a low pressure autoclave, extracted by roller and screw mills, fermented without fibers, and distilled twice through a copper pot still. He then stored this expertly crafted tequila in stainless steel tanks to preserve all of its aromas, until he deemed it ready for release.
The chalky terroir is generously expressed by the over-ripe agaves, and the tequila has a marked minerality and intensely complex cooked agave notes, cinnamon, citrus, black pepper, and olive. The mouthfeel is extremely rich and concentrated due to the long aging, presenting earthy, buttery, and saline qualities on the palate. This is a far deeper and more complex blanco than anything else on the market.
