Biodynamic farming creates a natural link between people, soil, and plants, requiring constant human observation and attention.  It is an admiral method of farming but fairly daring in a region like Chablis, where mother nature is not always the most convivial. Late spring frost, cool temperatures, and variable weather conditions always make for a tricky harvest season, but Julien Brocard is a true steward of the land. By planting fruit trees, Brocard has witnessed a resurgence of wildlife in the vineyards and microbial life in the soil.  Boissonneuse Chablis is chock-full of energy & focus with persistent acidity, minerality, lemon oil, and wet stones.
