Los Nahuales 'Metodo Antiguo' Mezcal Artesenal, Oaxaca, Mexico
Los Nahuales was among the first to bring premium artisanal mezcal to the USA, after refurbishing a small distillery in Santiago Matatlan in 1996. All aspects of production are carried out here in small batches at Destilería los Danzantes.They use artisanal methods, but with some modern improvements like insulated stills, and heating coils to maintain fermentation in cold weather. Inoculation is always with wild yeasts, and the Mezcal is twice distilled in pot stills, with half of the second distillation on a Portuguese Hoga pot still. Sustainably grown Coyote (Agave Mexicano) now is 70% of the Nahual blanco. Metodo Antigua is unique in that the mezcal is proofed down not with water, but instead using the tails of the second distillation, leading to a fuller and less diluted spirit that is excellent for stronger cocktails.
