El Muelle de Olaso is a blend of two popular sherry grapes - Palomino Fino and Pedro Xímenez - sourced from the esteemed El Corregidor estate vineyard in Pago de Carrascal. The grapes are harvested at night to maintain their freshness and prevent oxidation. This wine boasts a bright and refreshing taste with hints of Meyer lemon peel, yellow fruits, sea spray, and a distinct chalky minerality. It is recommended to serve it with just a slight chill rather than over-chilling it.
