Lukas Hammelmann is a steadfast counterpoint to everything you think you know about German wine. I keep trying, and failing, to find the closest reference for his wines; they not only push boundaries, but they seem to rearrange the walls themselves. His sparkling 'Onion Rings' is a hazy crazy savory affair, best paired with fried fare. Closed with a pop top and meant to be no-frills fun, it's essentially a pet-nat, but the German term 'Perlwein' best describes the chunky pearlescent bubbles that burst from this endearingly unique bottle.
