Mezcalosfera is a Oaxacan mezcal collective that empowers artisanal independent mezcaleros and preserves the the history of mezcal production in Oaxaca. It is a project under the umbrella of Mezcaloteca, a locally respected mezcalería and collective that curates a mezcal library in the city of Oaxaca de Juárez. Mezcalosfera offers small producers the exposure and financial liberty to produce and showcase batches of mezcal that would otherwise be too limited to offer to the general public. Each bottling is credited to the independent mezcalero, and is available only as a limited-edition run - so get it while you can.
Only 60 liters of this unique pechuga mezcal were produced by Maestro Mezcalero, Job Cortés. Twice-distilled from local Espadin agaves grown in the puebla of Miahuatlán. The agaves are cooked in a conical earthen oven fired by pine wood, which burns with less smoke than most woods. Distilled in a pechuga style using sheep meat and various Oaxacan fruits in the distillation column to infuse their natural aromas in the final spirit. This unique aromatic flavor profile is perfect for complementing summer barbecues and outdoor celebrations by the bonfire.
This is a very traditional Pechuga, no additives whatsoever are used - only the aromas from the real fruits and meat using the traditional pechuga technique during the second distillation. The nose is wide and welcoming, like an outdoor barbacoa party, with high but subtle notes of cactus leaf and prickly pear, layered with rustic vegetal and meaty aromas. Due to the ancestral method of proofing down the spirit using the heads and tails of the distillate, the palate is very full and enveloping at this high proof. This is not a smoky Mezcal, but there is a hint of roasted meat ash. Definitely for the experienced drinker who appreciates the funk of a rustic rural pechuga from a small mezcalero like Job Cortes.
