Willett Distillery in Bardstown, Kentucky is one of the regions oldest and most respected whiskey producers. The member of the Willett family that started it all was John David Willett, who was the master distiller for five separate Kentucky distilleries in the 1800's. It wasn't until 1936, after the repeal of Prohibition, that his grandson, Thompson Willett, founded the Willett Distillery as we know it today. They have been producing classic bourbon and rye ever since.
Noah's Mill is Willett's highest level of Kentucky Bourbon and is made in the "Straight Bourbon" style. For such a high-proof whiskey it drinks exceptionally smooth, with an abundance of rich dark fruit notes in addition to the caramel and vanilla that Bourbon is known for. There is cherry, savory molasses, pecan pie, leather, quince, and cinammon on the nose. This is a deep and complex Bourbon; perfect for a classic Old Fashioned, or just to sip by itself on a big cube.
