The Maas Family in Wisconsin were the original owners of the Rumchata brand, and after selling it they put the money to good use creating the Dancing Goat Distillery in Madison. In 2010 they purchased a large batch of orphaned barrels of experimental whiskeys from MGP in Indiana, made with malts and ferments including distillers malt, malted negrapils, and malted carapils, using a 72-hour controlled fermentation.
The Dancing Goat Team secretly aged these whiskeys in their newly built rickhouse for 10 years, then embarked on an 18-month journey of analysis, blending, reentry testing, gauging, finishing, re-blending, and regauging. The ultimate result of their patience and labor was two ultra-complex and expertly blended whiskeys: a 10-Year Straight Bourbon, and this 10-Year American Single Malt.
Stillman’s Sonder Single Malt is the result of 3 rounds of selection, blending, re-barreling, and finishing. The aim was to achieve a balance of complexity and consistency, utilizing Virgin oak casks (at several toast and char points), ex-Bourbon casks, Wisconsin brandy casks, Cognac casks, and Calvados casks. If you are a Scotch drinker, leave your expectations on the shelf, as this is an entirely different and unique beast. The variety of barrel finishes creates a cornucopia of aromas and flavors, including golden apple, toffee, green walnut, toasted almond, and buckwheat honey.
